Rice pudding, when made with natural ingredients, can be a healthier alternative to ice cream and other treats in winter. It has a simple recipe and can be made right in your home within a short time frame.
Don’t throw that rice water away, use it like this!
Ingredients
- 3/4 cup uncooked white rice
- 2 cups milk (separately)
- 1/3 cup white sugar
- 1/4 teaspoon salt
- 1 egg (beaten)
- 2/3 cup golden raisins
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
Procedure
- Start your pudding with cooked white rice.
- Combine the cooked rice, sugar, and the milk or cream in a heavy saucepan over medium heat.
- Cook, stirring often until the liquid has reduced and the pudding has thickened. This should take about 20 minutes.
- Stir in dried or fresh fruit, toasted nuts, or a dash of spice. Try a combination of bananas and cinnamon or toasted walnuts and a bit of nutmeg.
- If you like a rich pudding, try mixing in a bit of beaten egg and some additional milk. Stir constantly for about 2 minutes to cook the egg and thicken the pudding. If desired, stir in a bit of cold butter to add sheen.
- Spoon your pudding into individual serving dishes; serve warm or chilled.
