Mini Mexican Chicken Meatballs: Recipe
- Fresh bread crumbs
- Milk
- Meat
- Small onion, finely chopped
- Garlic
- Salt
- Black pepper
- Beaten eggs
- Cheese
- Freshly chopped parsley

Steps
- In a small bowl, stir bread crumbs with milk until evenly combined. Let sit 15 minutes.
- In a large bowl, use your hands to combine meat, onion, and garlic. Season with salt and pepper, and then gently stir in bread crumb mixture, eggs, Cheese, and parsley until just combined. The mixture should be able to hold its shape if rolled into meatballs.
- Heat oil in a pan. Set meatballs aside, reduce heat to medium-low. Add meatballs and cover until cooked through, about 8 minutes more.
