From ancient times most of Nepalese homes used to cook and eat Kwati (soup made from mix of lentils) on the day of Janai Purnima. Nine varieties of lentils are germinated for four days kept soaked on water to develop a sprout and mixed to prepare a special soup called Kwati which is specially consumed on the day of Janai Purnima.

- Mixed beans
- Water
- Ghee - 1 tbsp
- Bay leaf - 2
- Jwanu - 1 tsp
- Onion - finely chopped - 1 small
- Ginger garlic paste - 1 tsp
- Garam masala - 1 tsp
- Turmeric powder - 1⁄2 tsp
- Cumin powder - 1 tsp
- Coriander powder - 1⁄2 tsp
- Chili powder - 1⁄2 tsp
- Tomato chopped- 3 tbsp
- Salt
- Coriander leaves
Preparation Method:
- Remove any extra foreign particles from the beans and wash well.
- Put in a bowl and fill required fresh water to soak beans overnight.
- Heat the ghee in a soup pot and temper jwanu and bay leaves.
- Add onion and sauté till light brown.
- Add ginger and garlic paste, turmeric, cumin, chili and coriander powder, and cook till aroma comes from the spices but not burnt.
- Add chopped tomato and mix well.
- Pour water and add cooked beans, and stir well.
- Bring it to boil and reduce the heat, simmer for 15 to 20 minutes
- Add salt to taste and serve hot and garnish it with coriander leaves.
