Initially employed as a chef, Khatri gained lot of valuable experience that led him to the current post of Kitchen Executive. We met up with Khatri to talk about his experiences and his love for cooking. [break]
How did you get into this line of work and how were you initially inspired?
I wanted to do something different and having always wanted to experiment with food and introduce new dishes I chose cooking as a profession. I wanted to develop a different style on cooking. I was heavily inspired by Bu’Keba chef Sandeep Khatri.
Are you professionally trained as a chef or did it come out as a hobby?
Though I had an interesting in cooking, I have not taken any kind of course in it, so I have to say it came to me as a hobby. I started working and I experience I got from chefs around me has helped me hone my skills. I would go for any training if I got the chance though.

How has your experience been as a chef?
It has been a wonderful experience working here especially because Bu’Keba treats food very differently and serves organic food. I have always been happy working here and my experiences have been positive, nothing negative.
Do you have any special dishes you cook?
Yes, I am well known around the kitchen for my Italian dishes. Specifically, I have been admired for my
pastas.
In the future, do you see yourself cooking or do you have other plans?
This is my profession and I want to stick to it. I see myself as a better chef, implementing better hygiene standards and providing quality food. I plan to gain more experience and developing my own fusions for dishes.
What does food mean to you?
Well, this is traditional. We used to eat food raw before but we’re cooking them now, adding spices for taste. Basically, we eat to live but now, with so many delicacies and dishes, food is an entertainment of its own and cooking, an art.
