KATHMANDU, Nov 20: Dr Sergey Vasilievich Velichkin, Ambassador of Russia to Nepal, lit the chimney at the Chimney Restaurant in Hotel Yak & Yeti on Monday.

The annual lighting of the chimney is a time honored tradition since Boris Lissanevitch started the Chimney Restaurant 38 years ago. The ceremony signifies the onset of winter in Kathmandu, and usually takes place during mid November.[break]

The name of the restaurant comes from the copper chimney and open brick fireplace in the centre of the room with firelight playing on ancient Nepali war shields and a semicircle of warm, red brick.

The handcrafted, open, copper shafted fireplace and the vaulted ceilings of the restaurant are an accentuation that goes well with the menu that includes Boris’s original recipes of Borstch with Smoked Bekti, Chicken a la Kiev, Grilled Chicken a’la Boris and the flaming baked Alaska Sagarmatha.

Executive Chef K K Basnet has also included an inspired international menu with Savor Rack of Lamb with Eggplant and Sesame Ragout; and Tartare of Smoked Salmon with Wasabi.

Dr Sergey Vasilievich Velichkin said that he was happy to be honoring the tradition and wished the restaurant and the staff all the best. “I am proud to stand where many esteemed people have stood before and lit the chimney,” he said at the ceremony.
