People assume making lal mohan is complicated when it is, in fact, one of the simplest mithai you can whip up in a matter of minutes.
Here is a simple way to make great lal mohans at home.
Ingredients
Khuwa – 1½ cup
Freshly made paneer – ¼ cup
Soda bicarbonate – a pinch
Maida – 30 gms
Ghee for deep frying
Sugar – 2 cups
Green cardamom powder – ¼ teaspoon
Method
Crumble up the khuwa and the paneer in a bowl. Both items should be mashed up well without leaving any lumps.
Add the soda, maida and the green cardamom powder. Knead to make a soft dough out of it. You can use a little milk if it is too dry. Give the dough a good knead for 10-15 minutes.
Make small balls of equal proportions out of the dough. Press the balls and put a strand of saffron in the center and roll it up to a ball. This is important as the softness of the lal mohan depends on it. If you do not have saffron, you can use green cardamom seeds or dry fruits instead.
In a pan, make sugar syrup by mixing the two of sugar with water. Let it boil for a few minutes.
Heat ghee or oil in a deep pan and deep fry the balls on low heat till golden in color. Drain the excess oil. Let the balls soak in the syrup for a few minutes.
Serve warm or chilled as desired.
Mushroom Paneer Butter Masala
Ingredients
100 gms paneer, diced
100 gms mushroom, diced
20 gms cashew paste (soaked in water and grounded until smooth paste)
50 gms tomato puree
1-2 green chilli
1 tbsp ginger garlic paste
1 tbsp oil + 2 tbsp butter
½ tsp red chilli powder
1 tsp garam masala
Water
Fresh coriander leaves for garnishing
Salt to taste
Method
Heat the oil and butter in a pan;
Add the ginger garlic paste and fry for some time;
Add the tomato puree and stir well;
Add the red chili powder and fry till oil starts to leave the sides of the tomato paste;
Now add the cashew paste and sauté till the oil begins to leave the sides of the paste;
Add water, mushroom and stir and let it simmer on low flame till it thickens;
Add the paneer cubes and the garam masala and let it simmer;
Garnish with coriander leaves and green chillis and serve hot.

Ingredients
l chilled pineapple juice
l chilled orange juice
l chilled mango juice
240 ml fresh cream
Grenadine syrup
180 ml soda
Ice cubes
Method
Pour all the juices in a big bowl;
Add the ice cubes fresh cream and grenadine syrup;
Mix all the ingredients till the cream dissolves;
Pour into glasses. Garnish the glass with a slice of orange or pineapple.
