ACHAAR
Sesame: Used primarily for momo cha, sesame is often ground and mixed with salt, chillies, and water to have a thin gravy that also doubles as soup to dunk momos in.
Tomato: The standard achaar available in most places is the tomato blend that normally uses boiled tomatoes mixed with salt, ginger, garlic, and parsley. Red in color and not too thick, the consistency is ideal for dipping.
Garlic: A blend that is not found everywhere, Garlic achaar comprises dry chilies friend in oil and blended with ginger paste giving it a dark soy hue and a unique taste.
Red Chili : Using ground red chilies, the Red Chili achaar is generally thicker and hotter, so if you like your momos fiery hot, this is the achaar to request.
