Breakfast blunders
Bring an 8-inch skillet sprayed with nonstick spray to medium heat. Add egg, and let it coat the bottom. Cover and cook for 2 minutes, or until solid enough to flip. Carefully flip egg crust. Top with beans and cheese, leaving a 1/2-inch border. Cover and cook for 1 minute, or until crust is fully cooked and cheese has melted. Drizzle with taco sauce.
2. Bacon-Avocado Egg Bites
We gave the classic deviled egg a 2015 makeover. Très chic!
Ingredients:
1 slice center-cut bacon or turkey bacon
1 oz. (about 2 tbsp.) mashed avocado
3 large hard-boiled eggs, chilled, halved, yolks removed (click for tips)
Seasonings: salt, black pepper, garlic powder, onion powder
Directions:
Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.) Chop or crumble. Place mashed avocado in a small bowl, and mix in a dash of each seasoning. Distribute seasoned avocado among egg white halves, and top with chopped/crumbled bacon.
3. Grin 'n Carrot Fries
Ingredients
1 1/2 lbs. peeled carrots (about 8 large carrots)
1/4 tsp. coarse salt, or more to taste
Directions:
Preheat oven to 425 degrees. Spray 2 baking sheets with nonstick spray. Cut carrots into French-fry-shaped spears. Lay them on the sheets, evenly spaced, and sprinkle with salt. Bake for 15 minutes.
Flip spears. Bake until tender on the inside and slightly crispy on the outside, about 15 more minutes. (The thicker the fries, the longer the cook time.)
Air Fryer Alternative! Set air fryer to 392 degrees. Working in batches as needed, cook about 12 minutes each, shaking the basket halfway through.
4. Ingredient Dough
Ingredients
1/2 cup whole-wheat flour
3/4 tsp. baking powder
1/2 cup fat-free plain Greek yogurt
Optional seasonings: garlic powder, salt, and pepper
Directions
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray. In a large bowl, combine flour and baking powder. Add desired seasonings to taste. Stir until uniform. Add yogurt and thoroughly mix until a dough-like texture is reached. Roll out dough into a pizza crust or form into breadsticks. Bake until cooked through, 15 - 20 minutes.
